• 270g Vittoria tomatoes
  • 1 extra large ripe and ready avocado
  • 8 slices of buffalo mozzarella
  • 2 tbsp extra virgin olive oil
  • 6-8 fresh basil leaves

    Remove the tomatoes from the vine and wash. Drain and cut into halves.

    Slice the avocado into long strips and layer on a large serving dish. Arrange the mozzarella slices around the avocado. Scatter the cherry tomato halves over the plate.

    To serve, drizzle with olive oil and season. Tear the basil leaves and sprinkle on top of the salad.
