Remove the tomatoes from the vine and wash, drain and finely chop.
Place the finely chopped tomatoes, peppers, coriander leaves, chilli and onion in a large bowl and mix.
Peel and crush the garlic in a small separate bowl. Add the lime juice and olive oil.
Add the dressing to the tomato and pepper mix, then season to taste. Set aside for 30 minutes at room temperature for maximum flavour. Serve with chargrilled ciabatta slices to dip or tortilla chips and pitta slices.
