• 400g Vittoria tomatoes
  • 1 small red onion
  • 28g fresh mint
  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon zest

    Remove the tomatoes from the vine, wash and halve.

    Arrange the tomato halves on a large plate. Finely slice the onion and tear up the mint leaves. Scatter the onion and mint leaves over the tomatoes.

    Just before serving, drizzle with extra virgin olive oil. Season to taste and sprinkle the lemon zest over the top.
