Ingredients

  • 6 crumpets
  • 1 can baked beans
  • 1 pack Plant Pioneers Shroomdogs
  • 1 block of Tofoo Naked Tofu, Organic
  • 3 tbsp oat milk
  • 1/4 tsp ground turmeric
  • Salt to taste
  • 125g cherry tomatoes - halved
  • 2 handfuls fresh spinach
  • 1 tsp olive oil

Method

    Preheat the oven to 180°C/gas mark 6. Heat the olive oil in a frying pan over a medium-high heat. Add the spinach and cook for a few minutes until wilted

    Cut the crumpets in half and scatter in a 2-litre baking dish. Add the sausages and wilted spinach

    In a bowl crumble the tofu and combine with ground turmeric, salt and oat milk. Scatter on the baking dish along with the beans and cherry tomatoes. Bake in the oven for 25 minutes.
