• 2 x 350g packs Sainsbury’s Sweet & Smoky BBQ Pulled Jackfruit
  • 1 x 380g carton Sainsbury’s black beans, drained and rinsed well
  • Juice of 1/2 lime
  • 1 tbsp fresh coriander, roughly chopped
  • 1 tbsp fresh parsley, roughly chopped
  • 4 wholemeal wraps
  • 2 tsp olive oil
  • 2 avocados, peeled and roughly mashed with a fork
  • 8 tbsp dairy-free natural yogurt
  • 4 lime wedges, to serve

    Preheat the oven to 200°C/180°C fan/gas 6 and cook the jackfruit according to pack instructions. Meanwhile, mix the black beans with the lime juice, coriander and parsley.

    For the nachos, cut the wraps into 8 triangles each. Brush all over with the olive oil, season, then put in the oven on a baking tray for the last 10-15 minutes of the jackfruits' cooking time.

    To serve, scatter the nachos over a large platter. Top with alternate spoonfuls of the cooked jackfruit, black bean salsa and then finish with the avocado and yogurt. Serve with the lime wedges.
