• 2 tsp vegetable oil
  • 1 onion, diced
  • 250g lean turkey mince
  • 1 carrot, thinly sliced
  • 1 tin red kidney beans in water, drained
  • ½ tin chopped tomatoes
  • Salt and pepper
  • 1 Uncle Ben's wholegrain spicy Mexican rice pouch
  • 2 tsp fat free Greek yogurt
  • Chilli con carne spices
  • 1 bunch of fresh coriander

    Heat the oil in a non-stick frying pan, add the onion and cook until softened.  Increase the heat and add the turkey mince, cook until it's browned.

    Add the carrots, chilli con carne spices, kidney beans and chopped tomatoes.  Season with salt and pepper, reduce the heat and allow to simmer gently for 15-20 minutes.

    Cook rice in microwave as per instructions on pack. Divide rice into 2 bowls and top with the turkey chilli con carne.  Spoon over some yogurt and sprinkle with chopped coriander. Enjoy!
