Preheat oven to 190°C/170°F/gas mark 5.
Place a piece of parchment paper large enough to cover the bottom of a roasting tray and lay out 9 slices of pancetta so they are close to each other but not touching, roast for ten minutes, remove from oven and allow to cool.
In a large mixing bowl combine the turkey, egg, flour, shallots, salt, and pepper and mix together well.
When well combined, form this mixture into three ball shapes and press them with your hand on a clean tabletop into burger pattie shapes.
Take a mixing bowl, add the sprouts,1 tbsp of vinegar and massage well until they start to soften. To this mixture add the cranberry sauce and dolcelatte and stir gently until incorporate.
Take a frying pan or skillet and toast the brioche tops and bottoms until golden, remove from pan and set aside.
Wipe the frying pan/skillet and place over a medium heat, add enough oil to coat the bottom of the pan and immediately add the burgers, cook for 10-12 minutes turning every 2-3 minutes, they should be golden brown and piping hot
Assemble the sandwiches as follows, starting at the bottom to asseble; bun base, lettuce leaves, tomato slice, red onion slice, burger, buffalo wing sauce, sprout slaw, pancetta, burger bun top. Enjoy!
