Remove the steaks from the fridge around half an hour before you want to cook them, so they reach room temperature.
Put the cocoa powder on a plate big enough to hold the two steaks. Pat the steaks dry with some kitchen paper, then place them on the plate. Rub the cocoa into both steaks until they are evenly coated.
Heat a large frying pan over a high heat until it’s smoking hot. Brush the steaks lightly with oil and sear in the hot pan, turning frequently, according to how you like your steak cooked: 3 minutes for rare, 4 minutes for medium rare, 5 minutes for medium and 6 minutes for well done. Serve sprinkled with the pink peppercorns.
