- 75 ml light soy sauce
- 1 tbsp vegetable oil
- 3 tbsp runny honey
- 1 clove garlic, crushed
- 8 chicken drumsticks
- 200 g mixed leaf salad
Put the chicken in a shallow bowl. Mix together the soy sauce, oil, honey and garlic, then pour over the chicken, cover and leave to marinate in the fridge for at least an hour, or even overnight.
Preheat the oven to 200°C, fan 180°C, gas 6. Arrange the chicken drumsticks in a roasting tin and cook for 30 minutes until cooked through.
Eat hot or let cool before transferring to an airtight container to take for lunch on a day out.
