- 75 g dried cranberries
- 100 g mixed unsalted nuts
- 80 g chocolate beans
- 100 g smooth milk chocolate
- 8 rice cakes
To make the trail mix, simply combine the nuts, cranberries and chocolate beans in a bowl. Divide into 4 portions or store in an airtight container for 3-4 weeks.
To make the choc rice crackers, melt the chocolate in a heatproof bowl over a pan of simmering water, being careful not to let the base of the bowl touch the water. Stir until completely smooth and spread over the rice cakes. Leave to set – this will take about 1 hour. They can be stored in an airtight container for up to 1 week.
Cook’s tip: Use any combination of dried fruit and unsalted nuts for the trail mix, and any kind of melted chocolate on the rice cakes.
