  • 1.5 kg fresh broad beans in their pods
  • 1 spring onion, trimmed and finely chopped
  • 2 tbsp crème fraîche
  • a few sprigs of fresh mint leaves
  • a little lemon juice
  • freshly ground black pepper, to taste

    Pod the beans, asking the toddlers to help you.

    Bring a small pan of water to the boil, carefully tip the beans into the pan and boil for 3 mins. Drain and plunge the beans straight into a bowl of cold water. Now sit down and enjoy peeling them – they should pop out of their skins.

    Put the beans into a blender (or a bowl and use a handheld blender) with the spring onion, crème fraîche and mint, and purée until smooth. Add a little more crème fraîche if you want it to be slightly more creamy.
