- 8 slices of wholemeal bread
- 80 g butter
- 4 free range eggs, hard boiled, chopped
- 2 tbsp mayonnaise
- 0.5 Romaine lettuce
- 4 apples
Cook the eggs in boiling water for 8 minutes.
Spread the bread slices with butter or vegetable spread.
In a bowl, mix the chopped, hard boiled eggs with the mayonnaise, then spread on 4 of the bread slices. Top with lettuce hearts and the remaining bread, then cut into quarters.
Finish your lunch off with an apple each.
