Ingredients

  • 8 slices sourdough bread
  • 2 tbsp extra-virgin olive oil
  • 1 large clove garlic
  • 100 g cherry tomatoes, halved
  • A handful of fresh basil leaves

Method

    Preheat the oven to 200°C, fan 180°C, gas 6. Arrange the bread slices on a baking tray and drizzle with the olive oil. Bake for 10 mins until toasted and golden.

    Peel the garlic clove, cut in half and rub the cut sides over the bread slices. Take 4 cherry tomato halves and, using the back of a fork, crush them into each bread slice until they are mashed and the juices have soaked into the bread. Sprinkle with the fresh basil leaves and a good grinding of black pepper. Repeat with the remaining tomatoes and basil, and serve.
