Make chewy cashew and date energy balls rolled in snowy-white desiccated coconut with just three ingredients. If you're feeling creative, roll them in your favourite toppings such as cocoa powder, chia seeds, chopped nuts or freeze-dried raspberries for a scrumptious elevenses treat or pre-workout snack. Eat immediately or refrigerate in an airtight container for up to five days
In a food processor, blitz the cashews and dates for 1 minute, until the mixture becomes thick and sticky.
Using your hands, roll the mixture into 15 bite-size energy balls. Roll them in the desiccated coconut and serve.
