Heat a large deep sided pan - that has a lid, over a medium heat add the onion and cook for 5 minutes until onions are soft and golden
Add the red pepper, garlic and cumin seeds and cook for another 5 minutes - until the vegtables are soft
Stir in harissa and tinned tomatoes, then bring to a biol and simmer for 30 minutes
Using a wooded spoon make 4 holes in the sauce and break an egg into each hole. Turn the heat down as low as you can and cover the pan.
Cook for 5-7 minutes until eggs are just set. Sprinkle with fresh coriander and squeeze of lemon juice.
