Cook the grains to packet instructions and leave to cool. Rinse the bell pepper and tomatoes, then slice the tomatoes in half and the bell pepper into small cubes.
In a mixing bowl, combine the spinach leaves, grains mix, pomegranate seeds, tomatoes and bell pepper, and then toss everything together. Slice the avocado into cubes and crumble the feta.
Transfer the salad into your serving dish, then top with the avocado cubes and crumbled feta.
Drizzle with olive oil, lemon juice and season to taste with salt and pepper.
Optional: Garnish with fresh basil.
