350g carrot – peeled and grated

350g raw beetroot – peeled and grated

2 shallots – sliced finely

2 tsp cumin seeds

2 tbsp olive oil

1 tbsp red wine vinegar

Handful of parsley – chopped up

20g Pumpkin seeds – toasted

Mix together the grated vegetables.

Heat the cumin seeds for 2-3 mins and mix through the vegetables

Mix together the oil vinegar and parsley – pour over the veg and toss to marinade – top with the toasted seeds.
