Heat the olive oil in a large, deep pan and sweat your onion, garlic, chilli, smoked paprika and cumin until soft.
Add in the diced fresh tomatoes, mixed beans, lentils, water and the Knorr Vegetable Stock Pot. Stir to combine, then cover and allow to simmer for 20 minutes
Serve with a squeeze of lime, creme fraiche & chopped coriander
