• 450g minced turkey breast meat
  • 25g wholemeal breadcrumbs
  • 1 red pepper, deseeded and finely diced
  • 1/2 small onion, finely chopped
  • 2 eggs, lightly beaten
  • 1 clove garlic, crushed
  • Zest of 1 lemon
  • 1 tsp dried mixed herbs
  • 100g tzatziki sauce, to serve
  • A sprig of fresh dill (use dried if you don't have fresh), (optional, to garnish)
  • Zest of 1/2 lemon (optional, to garnish)

    Preheat oven to 200°C/180°C/gas 6. Line a large baking tray with baking paper.

    Place all the ingredients in a large bowl and use your hands to mix everything together until well combined.

    Roll the mixture into 14 golf ball-sized meatballs. Place the meatballs onto the baking tray and bake for 18-20 minutes, or until lightly browned and the meatballs are cooked through.

    Serve immediately with tzatziki sauce, garnished with dill and lemon zest, if desired.
