Ingredients

For the pizza:

  • 250 g lean mince beef
  • 1 tsp paprika
  • 1 tsp cumin
  • 0.5 tsp allspice
  • 0.5 spanish onion, thinly sliced
  • 1 clove garlic, minced
  • freshly chopped herbs of your choice (dill and parsley recommended)
  • 0.5 tsp salt
  • 4 wheat tortilla

For the salad:

  • 10 radishes, cut into circles
  • half medium cucumber, cut into cubes
  • 2 spring onions, finely sliced
  • 2 tomatos, cubed
  • half a pomegranate, seeds only
  • juice of half a lemon
  • 0.5 tsp sumac
  • salt and white pepper to season
  • 2 tbsp olive oil

For the minted yogurt, to serve:

  • 100 g Greek yogurt
  • 2 tbsp dried mint
  • squeeze of lemon juice
  • salt to season

Method

For the pizza:

    In a medium mixing bowl, mix the mince with all the ingredients excluding the tortilla until well combined.

    Place the tortillas straight onto a baking tray. Take a quarter of the meat mixture and spread thinly across the top of the tortilla being careful that you get a nice thin layer. Repeat with the other three tortillas.

    Place the Turkish pizza under the grill and cook for 5 minutes until the meat is brown and the tops are crisp. 

For the salad

    Place all the ingredients for the salad into a medium size bowl and mix together until all vegetables are dressed.

    To serve, take a tortilla, place a spoonful of salad over the top (and minted yogurt if using) and wrap up using baking paper and serve.
