• 1 tbsp olive oil by Sainsbury's
  • 500 g pack classic tomatoes by Sainsbury's, washed and cut into wedges
  • 2 red onions, peeled and cut into wedges
  • 1 bulb garlic, unpeeled and broken into cloves
  • 1 tsp smoked paprika, thyme & garlic by Sainsbury's
  • 1 yellow pepper, washed, deseeded and sliced
  • 2 tbsp red wine vinegar by Sainsbury's
  • 100 ml chicken stock, made with chicken stock cube by Sainsbury's
  • 1.3 kg pack chicken thighs by Sainsbury's

    Preheat the oven to 180°C, fan 160°C, gas 4. Put the oil in a large, deep baking tray with the tomatoes, red onions, garlic cloves, paprika seasoning, yellow pepper, red wine vinegar and stock. Season with freshly ground black pepper and mix well. Sit the chicken thighs on top and bake for 1 hour.

    Squeeze the soft garlic cloves out from their skins and into the pan, then divide the chicken, vegetables and sauce between 4 plates. Serve with mashed potato or rice, if you wish.
