- 1.25 kg potatoes
- 1 tbsp olive oil
- 454 g pork sausages
- 780 g tin of ratatouille Provençale
- Black pepper to season
Preheat the oven to 200°C, fan 180°C, gas 6. Prick the potatoes with a fork and cook in the microwave for 10 minutes. When finished, rub them with the olive oil and place on a baking tray.
Bake for a further 10 minutes. Meanwhile, preheat the grill and cook the 8 large pork sausages following pack instructions.
While the sausages are cooking, empty the tins of ratatouille Provençale into a small saucepan and heat through. Serve over the baked potatoes with the sausages on the side.
Cook's tip: to make your own ratatouille, gently fry 1 small chopped onion with 1 medium chopped courgette and 1 deseeded and chopped red pepper for 10 minutes or until softened. Add a can of chopped tomatoes, a splash of Worcestershire sauce and a pinch of sugar. Simmer for 15 minutes, check the seasoning before serving with the sausages and potatoes.
