• 2 spring onions
  • 2 fresh thyme stalks, leaves removed and chopped
  • 1 tsp olive oil
  • 500 g lamb mince
  • 6 dried apricots
  • 6 small wholemeal rolls (2 for each of the adults and 1 each for the toddlers)
  • Sliced tomato, cucumber and lettuce to serve

    Trim the spring onions and finely slice. Pull the thyme leaves off the stalks and chop. Heat the teaspoon of oil in a frying pan, add the onion and thyme and cook gently until the onion is soft, leave to cool.

    Using scissors, chop the apricots into very small pieces – the smaller the better so that they are easier to mix evenly with the meat.

    Put the mince into a big bowl, add the chopped apricots and soft, cooled onion and mix together. Shape the mixture into about 12 small burgers.

    Heat the remaining oil in a heavy-based frying pan, fry the burgers for about 4-5 minutes on each side until cooked through. Flatten them slightly with a spatula as they cook to make sure that they cook through to the middle.

    Serve with the salad and bread rolls.
