- 1 readymade deep-pan pizza base
- 4 tbsp tomato and herb pizza topping
- 200 g spinach, washed and drained
- 4 eggs
- 2 tbsp grated parmesan cheese
Preheat the oven to 200°C, fan 180°C, gas 6. Put the pizza base on a baking sheet and spread with the pizza topping.
Microwave the drained spinach on high for 2 minutes. Cool and squeeze out any excess water. Scatter on the pizza and bake in the oven for 10 minutes.
Remove the pizza and make 4 holes in the spinach. Crack an egg into each hole, then return the pizza to the oven for 8 minutes, or until the eggs are cooked thoroughly.
To serve, sprinkle over the parmesan and grind over a little black pepper, to taste
