Two of your 5 a day
Heat the olive oil in a deep frying pan and fry the onion for 5 minutes until soft. Add the chopped tomatoes, then half fill the tin with water and pour this in. Add the cannellini beans, sugar, vinegar and tabasco. Simmer for 10 minutes until thickened.
Stir in the pulled pork, season well and simmer for another 5 minutes to heat through. Toast the bread.
Taste the beans and add more tabasco or sugar if needed, then spoon over the toasts. Scatter with the chopped coriander to serve.
