Butter beans or Lima beans, are a great source of protein and fibre, we've swapped them in to make a mash to go with this succulent roasted salmon.

In a pan, on a medium heat add the beans, the spread, garlic, milk and start to mash together a wooden spoon or a masher will work well – cook together for 4-5 mins
Preheat the grill to high – and line a baking tray drizzle a little olive oil and place the salmon pieces flesh side up and add a little more oil
In a small bowl mix together the honey and mustard and pour over the salmon – place these under the grill and cook for 5 minutes until its golden on top
While the salmon is cooking, defrost the spinach in a pan and steam the broccoli - once piping hot, you're ready to serve.
