• 2 ripe avocados
  • 1 lime, juiced
  • ½ tsp ground cumin
  • ½ red chilli, washed, deseeded and finely chopped
  • ½ red onion, finely chopped
  • 125g vine-ripened tomatoes, washed and chopped

    Mash the flesh of the avocados in a bowl. Add the lime juice and cumin and mix well. Season with freshly ground black pepper, then stir in the chilli, red onion and tomatoes.
