• 200g 50% less fat Greek-style cheese, cut into bite-size pieces
  • 8 vine tomatoes, washed and cut into wedges
  • 150g Greek kalamata olives
  • 1 red onion, finely sliced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • ½ tsp cayenne pepper
  • ½ tsp caster sugar

    In a large bowl, mix together the feta, tomatoes, olives and red onion.

    Combine the olive oil, lemon juice, cayenne pepper and sugar in a small bowl and season with freshly ground black pepper. Drizzle over the salad just before serving.
