Preheat the oven to 160°C, fan 140°C, gas mark 3. Melt the butter with the honey and vanilla essence in a small pan.
Mix the oats, berries, nuts and seeds, and mixed nuts into the melted butter mixture and stir well.
Spread out over a large baking tray and bake in the preheated oven for 45 minutes, stirring every 5 minutes, until golden.
Remove from the oven and leave to cool. Store the granola in an airtight container at room temperature for up to 1 month.
