Pre-heat the oven to 180c/160c fan
In a large bowl, combine the oats, pecan nuts and pumpkin seeds.
In a separate jug, combine the orange zest vanilla essence, cinnamon rapeseed oil, egg whites and honey. Mix well to combine all the ingredients.
Mix this in with the dry ingredients and spread thinly on a baking tray that has been lined with greaseproof paper. Bake for ?
To make the filling place the frozen berries in a pan with the star anise, cinnamon and honey. Cook for 5 minutes or until the fruit has melted and is hot. Serve this on top of the fruit and enjoy!
Place the fruit mixture into an oven proof dish and lay the pear quarters over the fruit mixture. Sprinkle over the crumble mixture and place in the oven for 15-20 minutes or until piping hot
