Squeeze juice from the citrus wedges into a pitcher. Remove any seeds (if possible) and throw the wedges into the pitcher.
Add your Ellercombe sparkling wine and pressed apple juice
Add your cognac (if using), your sugar syrup, your mint leaves and give it a stir to marry the flavours
Add Sicilian lemonade, mint leaves and cubed ice to fill.
Give it another short stir to chill and slightly dilute the sangria. Serve and enjoy!
