- 75 g frozen raspberries
- 2 tsp runny honey
- 75 ml apple juice
- 3 scoops vanilla ice cream
- 200 ml skimmed milk
Put the frozen raspberries and the honey into a blender. Pour over the apple juice and blend until it forms a thick purée. Remove from the blender and set aside.
Rinse out and dry the blender. Add the vanilla ice cream and milk, then whiz until smooth.
Divide between glasses and drizzle over the raspberry coulis. Swirl with a straw to create a ripple effect.
