Peel a ripe pear and remove the centre and roughly chop. Peel and roughly chop the ginger. Pop into a blender. Add three shots of the Caleno and blitz until well blended and everything is smooth.
Add the merchants heart tonic to the blitzed fruit mix as it will fizz and rise up. Give a little stir and pour into glasses with plenty of ice in it. Finish with the pomegranate juice by pouring down the edge of the glass to create a layered look and finish with some pomegranate seeds for garnish.
