- 4 tsp Fairtrade caster sugar
- 100 ml lime juice
- 28 g fresh mint, leaves picked and washed, reserving a few sprigs to garnish
- Crushed ice
- 1 litre soda water
- 2 limes, cut into wedges
Put the sugar in the base of a 1.2 litre jug. Add the lime juice. Lightly crush the mint leaves to release their flavour, then add to the jug.
Give everything a stir. Half fill the jug with the crushed ice and add the lime wedges.
Stir, then top with soda. Garnish with a mint sprig and serve.
