- 3 ripe passionfruit
- Juice of 1 lime
- 1 tsp caster sugar
- 5 mint leaves, chopped
- 1 papaya, peeled and cut into chunks
- 1 large ripe mango, peeled and cut into chunks
- 1/2 ripe pineapple, flesh cut into chunks
Scoop the passionfruit pulp into a bowl. Add the lime juice, sugar and 1 tablespoon of water. Stir until the sugar dissolves, then add the chopped mint.
Toss the prepared fruit in the syrup. Cover and chill until ready to serve.
