- 500 g frozen mixed summer fruits
- 200 ml chilled custard
- 2 tbsp Greek natural yogurt
- 4 tbsp runny honey
- Few mint sprigs, to decorate
- 8 thin slices ginger loaf cake, sliced (optional)
Tip the berries into a food processor and add the custard, Greek yogurt and honey. Pulse until smooth.
Scoop out into glasses and decorate with a drizzle of honey and a mint sprig. Serve with thin slices of ginger loaf cake, if you like.
Cook’s tip: If the ice needs a little freezer boost, pop into the freezer for 10-15minutes to firm up.
