- 400 g forced rhubarb, cut into 7.5cm lengths
- 50 ml maple syrup
- 4 tbsp natural yogurt
- Zest of 1 washed lemon
Preheat the oven to 200°C, fan 180°C, gas 6.
Place the rhubarb in a single layer in a roasting tray and drizzle with the maple syrup.
Bake for 12 minutes then serve with the yogurt and zest, drizzling over any of the cooking juices that are left in the roasting tray.
