- 1 vanilla pod
- 700 ml whole milk
- 100 g pudding rice
- 25 g light brown sugar
- 300 g frozen mango chunks, defrosted
- 2 tsp honey or maple syrup, to serve (honey is only suitable for babies over 1 year old)
Split the vanilla pod in half lengthways and scrape out the seeds with a sharp knife.
Add the seeds and pod to a small saucepan along with the milk, pudding rice and the light brown sugar.
Bring the pan to a gentle boil. Turn down the heat and simmer for 20 mins, stirring regularly until the rice is cooked and the pudding is thick and creamy.
Remove the vanilla pod from the pan. Add the mango chunks and cook for a further 5 mins.
Serve drizzled with honey or maple syrup. (Honey is only suitable for babies over 1 year old).
Tip: for toddlers, blend the mango and then fold the fruit through the rice. Whizz mixture further for younger babies, if they have not yet been introduced to lumps.
