• 90 g couscous
  • 50 g dried apricots, finely chopped
  • 50 g frozen peas
  • 0.5 tbsp olive oil
  • 6 mini chicken fillets

    Put the cousous in a bowl and pour over 160ml boiling water. Cover with clingfilm and set aside for 10 mins.

    Meanwhile, add the apricots to a pan of boiling water. Simmer for 10 mins, adding the peas for the last 5 mins. Drain and add to the couscous.

    Heat the oil in a frying pan and fry the chicken fillets for 4 mins each side, or until cooked. Finely chop, then stir through the couscous before serving.
