• 500g, 5% fat beef mince
  • 1 medium onion, peeled and chopped
  • 3 garlic cloves, peeled and crushed
  • 2 x 230g pots salsa
  • 2 x 300g bags ready prepared courgetti
  • 160g bag fresh shelled peas
  • 1 tbsp fresh basil leaves

    Heat a deep sided non-stick frying pan. Add the beef mince in small clumps and fry for 3  minutes, without over breaking the beef up.  Add the onions and fry for 5 minutes, tossing the pan occasionally.

    Add the garlic, season the beef with black pepper and toss the ingredients in the pan. Add the salsa, stir carefully and leave to simmer for 20 minutes. Cover the pan if you wish after 10 minutes.

    Meanwhile, cook the peas in the microwave following pack instructions. Heat another pan and add the courgetti with the cooked peas. Toss the courgetti  in the pan, using 2 wooden spoons, for a few moments to just cook the courgetti.

    Spoon the courgetti and peas onto plates and top with the bolognese. Season with pepper and toss with torn basil leaves.
