You’ll be the envy of the entire office when you pull this number out of the microwave. Gooey and moist, it’s guaranteed to satisfy any mid-afternoon chocolate cravings. You can also swap the banana for strawberries, the dark chocolate for white chocolate and add chopped almonds or hazelnuts
In a large mug, mix together the flour, sugar and cocoa powder. Pour in the milk and whisk together with a fork.
Place the butter in the microwave and heat on high for about 30 seconds. Keep an eye on it as you don’t want the butter to burn. Once melted, pour the butter into the chocolate mixture and stir through.
In the same mug you used to melt the butter, lightly beat the egg and then add it to the chocolate mixture. Whisk well.
Finely slice the banana and add the chunks to the mug along with the cubes of chocolate and maple syrup. Stir through.
Place the mug into the microwave and heat on high for one minute. Check it when the minute is up – it should have risen quite a bit – and then pop it back into the microwave for another 30 seconds. Once cooked, take the cake out of the microwave and leave to cool for one minute before digging in.
