Heat the oil in a non stick frying pan, add the onion and cook until softened. Turn up the heat and add the diced chicken. Cook for 2 - 3 minutes or until the chicken begins to brown.
Next add the Balti paste and stir for 1-2 minutes. Pour in the coconut milk along with 80ml of water and bring the curry up to simmer. Season with a little salt and pepper and allow to simmer for 5 minutes.
Meanwhile squeeze the Uncle Ben's wholegrain pilau rice pouch to separate the rice, tear a 3cm vent and then microwave on full power for 90 seconds.
Stir the spinach through the curry. Place the rice in the centre of the plate and spoon over the Chicken and Spinach curry. Garnish with a few chopped coriander leaves. Serve and enjoy!
