• 2 x 300g packs baby sweet peppers
  • 1 tbsp olive oil
  • 175g natural yogurt
  • 2 tbsp fresh dill, roughly chopped
  • ½ tbsp lemon juice
  • 1 large garlic clove, crushed

    Heat the oil in a wide, heavy-based pan over a high heat. Cook the peppers in batches for 8-10 minutes, turning regularly, until dark golden on all sides.

    Meanwhile, combine the remaining ingredients and season.

    Once the peppers are all cooked, arrange then on a large plate and leave to cool slightly, then serve with the dipping sauce.
