Ingredients

For the beef and beans

  • 6 small soft corn tortillas, cut into 8 triangles
  • 1 tsp oil/spray of Frylight
  • 1 red onion, diced
  • 1 clove garlic, crushed
  • 200g 5% fat beef mince
  • 1/2 tsp cumin
  • 1/2 tsp chilli flakes
  • 1/2 tbsp chipotle paste (strength varies, so check for heat before adding)
  • 2 x cans black beans, drained
  • 400g chopped tomatoes
  • 50g mozzarella, grated
  • 1 tbsp - Fat reduced yogurt
  • 2 tbsp sliced, jarred green Jalapeño - 1 tbsp reserved to finish the dish
  • half a lime, to serve
  • 10g coriander, chopped - to serve

For the salsa

  • 3 medium vine ripened tomatoes, halved, deseeded, diced
  • zest & juice of 1 lime
  • 1 small red onion, finely diced
  • 10g coriander, chopped

For the guacamole

  • 1 large avocado - peeled and roughly chopped
  • 1 large tomato, deseeded, diced
  • juice of half a lime
  • 1 red chilli, deseeded, finely diced

Method

For the nachos

    Heat the oven to 200c/ 180c fan/ gas 4, line a tray with parchment, spray the tortilla with Frylight, spread evenly & bake for 8-10 mins. 

For the beef & beans

    Into a non stick heated pan, add a squirt of frylight, or a drizzle of oil, Add the onion, garlic and cook over a gently heat for 5 mins

    Add the mince, cumin & chilli flakes and cook until the beef is brown all over, around 8 mins

    Add the chipotle, and cook for 1 min, add the tomatoes, and cook for a medium heat for 10 mins, until the beef is cooked through, and the liquid reduced. Add the beans after 6 mins. Set aside.

For the guacamole

    Add all the ingredients for the guacamole to a small bowl, and give a good mix so they are all incorporated.  

For the salsa

    Similarly for the salsa, add all the ingredients to a small bowl, and mix together.

To assemble

    Next, line a baking tray with parchment, spread an even layer of tortilla chips, top with some of the chipotle beefy beans, some grated cheese, half a tbsp of jalapeños, repeat with another layer

    Bake for 4-5 mins, until the cheese is melting

    Remove from the oven, spoon over the guacamole, yogurt, the rest of the jalapeños, fresh salsa, squeeze of lime juice and the coriander. Enjoy!
