Heat the oven to 200c/ 180c fan/ gas 4, line a tray with parchment, spray the tortilla with Frylight, spread evenly & bake for 8-10 mins.
Into a non stick heated pan, add a squirt of frylight, or a drizzle of oil, Add the onion, garlic and cook over a gently heat for 5 mins
Add the mince, cumin & chilli ﬂakes and cook until the beef is brown all over, around 8 mins
Add the chipotle, and cook for 1 min, add the tomatoes, and cook for a medium heat for 10 mins, until the beef is cooked through, and the liquid reduced. Add the beans after 6 mins. Set aside.
Add all the ingredients for the guacamole to a small bowl, and give a good mix so they are all incorporated.
Similarly for the salsa, add all the ingredients to a small bowl, and mix together.
Next, line a baking tray with parchment, spread an even layer of tortilla chips, top with some of the chipotle beefy beans, some grated cheese, half a tbsp of jalapeños, repeat with another layer
Bake for 4-5 mins, until the cheese is melting
Remove from the oven, spoon over the guacamole, yogurt, the rest of the jalapeños, fresh salsa, squeeze of lime juice and the coriander. Enjoy!
