Whisk the flour, milk then add the mashed bananas, cinnamon and salt and set aside
Take half your strawberries and crush using the back of a fork. Chop the rest into quarters - put aside for once you're ready to eat
Heat a non-stick frying pan with a small amount of the oil, once the pan is nice and hot take a tablespoon of the batter and drop into the pan, you can probably fit 2 or 3 in at a time
Once you can see the pancakes have started to cook all the way though use a spatula to loosen and flip over
Repeat the process till you have used all the batter
Stack the pancakes and top with the crushed and strawberry pieces and garnish with a sprinkling of mint.
