• 125g brown rice
  • 1 x 400ml can coconut milk
  • 2 ripe bananas

    Put the rice in a pan with the coconut milk. Bring to a simmer, stirring, then cook for 10-15 minutes. If it begins to dry out, add a splash of water now and then. Turn off the heat, cover the pan with a lid and leave for 10 minutes.

    Once the rice has cooled, mash in the bananas. Portion up and keep in airtight containers in the fridge.
