• 2 tsp maple syrup
  • 100 g unsalted butter, softened
  • 100 g light soft brown sugar
  • 1 capful vanilla extract
  • 1 large free-range egg
  • 150 g plain flour
  • 0.5 tsp baking powder
  • 75 g dried apple, very finely chopped

    Preheat the oven to 180°C, fan 160°C, gas 4. Line two baking trays with baking parchment.

    Put the maple syrup, butter, sugar and vanilla in a bowl and beat together until soft and creamy. Crack the egg into the bowl and mix well. Add the flour, baking powder and dried apple and mix everything together.

    Spoon onto the trays and bake for 10-12 mins until just slightly golden – they will still be soft. Leave to cool on the trays, then place on a cooling rack.


    Cook's tip: For babies: serve some apple purée and if they're ready for finger food, serve a cookie with the purée.
