- 100 g salted butter
- 150 g light brown soft sugar
- 1 medium free-range egg, beaten
- 0.5 tsp baking powder
- Zest of 1 lemon
- 225 g plain flour
- A few dried cranberries, sliced thinly, to decorate
- Your choice of decorations such as coloured sugar balls
Beat the butter and sugar together in a bowl until light and smooth.
Stir in the egg and baking powder.
Add the lemon zest and flour and mix well until fully combined.
Shape the dough into animals and decorate with dried cranberries and your choice of other decorations.
Place the biscuits on a lined baking tray and chill in the fridge for 30 minutes. Meanwhile, preheat the oven to 180°C, fan 160°C, gas 4.
Bake the biscuits for 12-14 minutes until lightly golden. Remove from the oven and leave to cool.
