- 100 g unsalted butter
- 100 g Fairtrade light brown soft sugar
- 1 tbsp golden syrup
- 150 g extra fine sponge flour, sifted, plus extra for dusting
- 50 g mini butterscotch chips
Preheat the oven to 180°C, fan 160°C, gas 4. Line a large baking tray with baking parchment.
Using an electric hand mixer, beat together the butter and sugar until pale and fluffy. Add the golden syrup and beat for 1 minute. Add the flour and butterscotch chips and mix with a wooden spoon until it forms a soft dough.
Lightly dust your hands with flour, then divide the dough into 14 balls. Flatten slightly with the palm of your hand and place on the baking tray, leaving space between them to spread out. Bake for 12-15 minutes, until lightly golden at the edges.
Remove from the oven and leave to cool on a wire rack.
