Ingredients

  • 1 large orange
  • 1 lime, juiced
  • 2 tbs light olive oil
  • 1 tbs fish sauce
  • 400g wild rice
  • 2 ripe mangos
  • 50g coriander
  • 30g mint leaves
  • ½ red onion, finely diced
  • 80g toasted cashew nuts
  • 6 spring onions, sliced
  • 2 green chillies, finely sliced

Method

    Segment the orange, reserving any juice. Mix the orange juice with the juice of the lime, the olive oil and the fish sauce.  Set the dressing aside.

    Cook the rice according to packet instructions and whilst still warm, mix with the dressing.  Allow to cool.

    Dice the mangos and combine these with the cooled rice, orange segments, spring onion and red onion.

    Top with herbs, cashew nuts and green chilli.
